  • 4 medium Sweet Potatoes peeled and cubed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 teaspoon Fresh Rosemary chopped
  • 2 teaspoon Fresh Thyme chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed sweet potatoes, olive oil, salt, pepper, rosemary, and thyme.
  3. Spread the sweet potato mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 45 minutes, stirring halfway through, until the sweet potatoes are tender and golden brown.
  5. Remove from the oven and serve hot.
