Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 1 bunch kale stems removed and chopped
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
  3. Roast the sweet potatoes in the oven for 25 minutes, or until tender and slightly crispy.
  4. While the sweet potatoes are roasting, massage the chopped kale with the remaining olive oil and lemon juice in a large mixing bowl.
  5. Once the sweet potatoes are done, let them cool slightly before adding them to the kale along with the cherry tomatoes.
  6. Toss everything together and adjust seasoning if needed. Serve immediately.
