Ingredients 

Main Ingredients

  • 2 large sweet potatoes sliced into rounds
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 cup black beans cooked
  • 1 cup corn kernels cooked
  • 1 cup diced tomatoes
  • 1 avocado avocado sliced
  • 1 tablespoon cilantro chopped
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, toss sweet potato rounds with olive oil, paprika, and cumin. Spread on a baking sheet.
  3. Bake for 25-30 minutes until crispy.
  4. Top baked sweet potatoes with black beans, corn, diced tomatoes, avocado slices, and chopped cilantro.
  5. Season with salt and pepper to taste. Serve immediately.
