Sweet Potato Nachos
Delicious vegan nachos made with sweet potatoes.

Main Ingredients
- 2 large sweet potatoes sliced into rounds
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 cup black beans cooked
- 1 cup corn kernels cooked
- 1 cup diced tomatoes
- 1 avocado avocado sliced
- 1 tablespoon cilantro chopped
- to taste salt and pepper
Preheat oven to 400°F (200°C).
In a mixing bowl, toss sweet potato rounds with olive oil, paprika, and cumin. Spread on a baking sheet.
Bake for 25-30 minutes until crispy.
Top baked sweet potatoes with black beans, corn, diced tomatoes, avocado slices, and chopped cilantro.
Season with salt and pepper to taste. Serve immediately.
