Ingredients 

Main Ingredients

  • 1 cup mashed sweet potatoes cooked and mashed
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup almond milk or any plant-based milk
  • 2 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoon coconut oil melted

Instructions 

  1. In a mixing bowl, combine mashed sweet potatoes, flour, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together almond milk, maple syrup, vanilla extract, and melted coconut oil.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a frying pan over medium heat and lightly grease with coconut oil.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with your favorite toppings.
