  • 1 cup coconut milk
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 vegan pie crust

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until smooth.
  3. Pour the mixture into the vegan pie crust.
  4. Bake for 60 minutes, or until the pie is set and the crust is golden brown.
  5. Let the pie cool before serving.
