Main Ingredients
- 2 large sweet potatoes peeled and diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- to taste salt and pepper
1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion and cook until translucent.
2. Add the minced garlic and cook for another minute.
3. Add the diced sweet potatoes, vegetable broth, ground cumin, and ground coriander. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
4. Use a blender to puree the soup until smooth. Return the soup to the pot.
5. Stir in the coconut milk and season with salt and pepper to taste. Heat through, then serve.
