Ingredients 

Tart Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 teaspoon salt
  • 0.5 cup vegan butter, cold and cubed
  • 2 tablespoons cold water

Berry Filling

  • 1 cup fresh berries (your choice)
  • 0.25 cup maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
  3. Add cold water and mix until the dough comes together. Press into a tart pan.
  4. Bake for 15 minutes or until lightly golden. Let it cool.
  5. In a saucepan, combine berries, maple syrup, lemon juice, and cornstarch. Cook until thickened.
  6. Pour the berry mixture into the cooled tart shell. Chill before serving.
