  • 2 sweet potatoes, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes, bell peppers, red onion, and garlic with olive oil, smoked paprika, salt, and pepper.
  3. Spread the mixture evenly on a baking sheet.
  4. Roast in the oven for 25 minutes, stirring halfway through, until vegetables are tender and slightly crispy.
  5. Garnish with fresh parsley before serving.
