Tabbouleh Salad Recipe
A fresh and zesty vegan salad made with bulgur wheat, fresh herbs, and vegetables.

Main Ingredients
- 1 cup bulgur wheat
- 1.5 cups boiling water
- 1 cup finely chopped fresh parsley
- 0.5 cup finely chopped fresh mint
- 0.5 cup finely chopped green onions
- 2 medium tomatoes, diced
- 1 cucumber, diced
- 0.25 cup fresh lemon juice
- 0.25 cup olive oil
- Salt and pepper to taste
Place bulgur in a bowl, pour boiling water over it, cover, and let it sit for 15 minutes.
Fluff bulgur with a fork and let it cool.
In a large bowl, combine parsley, mint, green onions, tomatoes, and cucumber.
Add the cooled bulgur to the bowl.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss to combine.
