Ingredients 

Main Ingredients

  • 1 cup bulgur wheat
  • 1.5 cups boiling water
  • 1 cup finely chopped fresh parsley
  • 0.5 cup finely chopped fresh mint
  • 0.5 cup finely chopped green onions
  • 2 medium tomatoes, diced
  • 1 cucumber, diced
  • 0.25 cup fresh lemon juice
  • 0.25 cup olive oil
  • Salt and pepper to taste

Instructions 

  1. Place bulgur in a bowl, pour boiling water over it, cover, and let it sit for 15 minutes.
  2. Fluff bulgur with a fork and let it cool.
  3. In a large bowl, combine parsley, mint, green onions, tomatoes, and cucumber.
  4. Add the cooled bulgur to the bowl.
  5. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
