Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground paprika
  • 0.5 teaspoon ground coriander
  • 1 large carrot, sliced
  • 1 large zucchini, sliced
  • 1 large red bell pepper, chopped
  • 1 can chickpeas, drained and rinsed 400g
  • 1 can diced tomatoes 400g
  • 1 cup vegetable broth
  • 0.5 cup dried apricots, chopped
  • 0.25 cup raisins
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Stir in all the spices and cook for another minute.
  3. Add carrot, zucchini, and bell pepper. Cook for 5 minutes.
  4. Add chickpeas, diced tomatoes, vegetable broth, apricots, and raisins. Bring to a boil.
  5. Reduce heat, cover, and simmer for 30 minutes.
  6. Season with salt to taste. Garnish with fresh cilantro before serving.
