Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 0.5 teaspoon ground turmeric
- 0.5 teaspoon ground black pepper
- 0.5 teaspoon ground paprika
- 0.5 teaspoon ground coriander
- 1 large carrot, sliced
- 1 large zucchini, sliced
- 1 large red bell pepper, chopped
- 1 can chickpeas, drained and rinsed 400g
- 1 can diced tomatoes 400g
- 1 cup vegetable broth
- 0.5 cup dried apricots, chopped
- 0.25 cup raisins
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Stir in all the spices and cook for another minute.
Add carrot, zucchini, and bell pepper. Cook for 5 minutes.
Add chickpeas, diced tomatoes, vegetable broth, apricots, and raisins. Bring to a boil.
Reduce heat, cover, and simmer for 30 minutes.
Season with salt to taste. Garnish with fresh cilantro before serving.
