Ingredients 

Main Ingredients

  • 200 g firm tofu cubed
  • 200 g soba noodles
  • 1 carrot julienned
  • 1 bell pepper sliced
  • 100 g broccoli florets
  • 2 tablespoon tamarind paste
  • 2 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced

Instructions 

  1. Cook soba noodles according to package instructions. Drain and set aside.
  2. In a pan, heat sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  3. Add tofu cubes to the pan and cook until golden brown on all sides.
  4. Add carrot, bell pepper, and broccoli to the pan. Stir-fry for 5-7 minutes.
  5. In a small bowl, mix tamarind paste, soy sauce, and maple syrup. Pour over the vegetables and tofu. Cook for another 2-3 minutes.
  6. Combine cooked soba noodles with the tofu and vegetable mixture. Toss well to coat.
  7. Serve hot and enjoy!
