Ingredients 

Main Ingredients

  • 1 package Frozen Tater Tots about 32 oz
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn Kernels frozen or canned
  • 1 cup Vegan Cheese shredded
  • 1 cup Salsa
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Cumin
  • to taste Salt and Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine black beans, corn, salsa, garlic powder, onion powder, cumin, salt, and pepper.
  3. Spread the mixture evenly in a baking dish.
  4. Top with shredded vegan cheese.
  5. Arrange the tater tots in a single layer on top of the cheese.
  6. Bake for 45 minutes or until the tater tots are golden and crispy.
  7. Let it cool for a few minutes before serving.
