Teriyaki Vegetable Stir-Fry
A delicious and easy vegan teriyaki vegetable stir-fry.

Main Ingredients
- 2 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup sliced carrots
- 1 cup snap peas
- 1 cup sliced mushrooms
- ¼ cup teriyaki sauce
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
Heat the vegetable oil in a wok over medium-high heat.
Add the garlic and ginger, and stir-fry for about 30 seconds until fragrant.
Add the broccoli, bell peppers, carrots, snap peas, and mushrooms. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
Pour in the teriyaki sauce and toss to coat the vegetables evenly. Cook for another 2-3 minutes until the sauce is heated through.
Serve hot over rice or noodles.
