Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon red curry paste
  • 1 can coconut milk (400 ml)
  • 1 cup vegetable broth
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup snap peas
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions 

  1. Heat oil in a large pan over medium heat. Add onion, garlic, and ginger. Sauté until fragrant.
  2. Stir in red curry paste and cook for another minute.
  3. Add coconut milk and vegetable broth. Bring to a simmer.
  4. Add bell peppers, zucchini, and snap peas. Cook until vegetables are tender.
  5. Stir in soy sauce and lime juice.
  6. Serve over cooked rice and garnish with fresh cilantro.
