Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk 14 oz
  • 1 cup mushrooms, sliced
  • 1 cup tofu, cubed
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish

Instructions 

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until fragrant.
  3. Stir in red curry paste.
  4. Pour in vegetable broth and coconut milk. Bring to a boil.
  5. Add mushrooms, bell pepper, and tofu. Simmer for 10 minutes.
  6. Stir in soy sauce and lime juice.
  7. Garnish with fresh cilantro before serving.
