Instructions
Heat oil in a pot over medium heat.
Add onion, garlic, and ginger. Sauté until fragrant.
Stir in red curry paste.
Pour in vegetable broth and coconut milk. Bring to a boil.
Add mushrooms, bell pepper, and tofu. Simmer for 10 minutes.
Stir in soy sauce and lime juice.
Garnish with fresh cilantro before serving.
