  • 2 cucumbers thinly sliced
  • 1 red onion thinly sliced
  • ¼ cup rice vinegar
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • ¼ cup cilantro chopped
  • 1 red chili thinly sliced, optional

Instructions 

  1. In a mixing bowl, combine rice vinegar, sugar, and salt. Stir until sugar and salt are dissolved.
  2. Add the sliced cucumbers, red onion, cilantro, and red chili (if using) to the bowl. Toss to combine.
  3. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
