Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup fresh cilantro, chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add diced onion and minced garlic, sauté until fragrant.
  3. 3. Add sliced carrot, red bell pepper, broccoli florets, and snap peas. Cook for about 5 minutes.
  4. 4. Pour in vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  5. 5. Stir in coconut milk, red curry paste, soy sauce, and lime juice. Simmer for another 10 minutes.
  6. 6. Garnish with fresh cilantro before serving.
