Main Ingredients
- 8 oz Rice noodles
- 1 Red bell pepper, sliced
- 1 Carrot, shredded
- 1 Cucumber, sliced
- 2 Green onions, chopped
- ¼ cup Cilantro, chopped
Peanut Sauce
- ¼ cup Peanut butter
- 2 tablespoon Soy sauce
- 1 Lime, juiced
- 1 tablespoon Maple syrup
- 1 clove Garlic, minced
- 1 teaspoon Ginger, grated
- 2 tablespoon Water
- ¼ cup Crushed peanuts for garnish
Cook the rice noodles according to package instructions.
While noodles cook, whisk together peanut butter, soy sauce, lime juice, maple syrup, minced garlic, grated ginger, and water in a mixing bowl.
Drain and rinse noodles under cold water.
Toss noodles with the peanut sauce.
Add sliced red bell pepper, shredded carrot, sliced cucumber, chopped green onions, and cilantro.
Garnish with crushed peanuts.
