Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • 1 cup snap peas
  • ¼ cup chopped cilantro

Peanut Sauce

  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha
  • 2 tablespoon water

Instructions 

  1. 1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. 2. In a mixing bowl, whisk together peanut butter, soy sauce, maple syrup, lime juice, sriracha, and water until smooth.
  3. 3. In a pan, sauté the carrots, bell pepper, and snap peas for 3-5 minutes until tender-crisp.
  4. 4. Add the cooked noodles and peanut sauce to the pan. Toss to coat everything evenly.
  5. 5. Garnish with chopped cilantro and serve immediately.
