Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 2 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 cups Mixed Vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • to taste Salt and Pepper
  • ¼ cup Fresh Cilantro, chopped

Instructions 

  1. 1. Heat the vegetable oil in a large pot over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and grated ginger, cook for another 2 minutes.
  4. 4. Add the red curry paste and cook for 1 minute, stirring constantly.
  5. 5. Pour in the coconut milk and vegetable broth, bring to a simmer.
  6. 6. Add the mixed vegetables and cook until tender, about 10-15 minutes.
  7. 7. Stir in the soy sauce and lime juice, season with salt and pepper to taste.
  8. 8. Garnish with fresh cilantro before serving.
