Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 Green bell pepper, chopped
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed (15 oz)
  • 1 can Kidney beans, drained and rinsed (15 oz)
  • 1 can Pinto beans, drained and rinsed (15 oz)
  • 2 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 cups Vegetable broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened.
  3. Add chopped bell peppers and cook for another 5 minutes.
  4. Stir in diced tomatoes, black beans, kidney beans, and pinto beans.
  5. Add chili powder, cumin, paprika, salt, and black pepper. Stir well.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat and let simmer for 30 minutes, stirring occasionally.
  8. Serve hot and enjoy!
