Instructions
Line a baking sheet with parchment paper.
In a saucepan, melt the vegan butter over medium heat.
Add brown sugar, vanilla extract, and salt. Stir constantly until the mixture reaches 300°F (150°C) on a candy thermometer.
Pour the mixture onto the prepared baking sheet and spread evenly.
Sprinkle chocolate chips over the hot toffee. Let them sit for a minute to melt, then spread the chocolate evenly over the toffee.
Sprinkle chopped nuts on top if using. Let the toffee cool completely, then break into pieces.
