Ingredients 

Main Ingredients

  • 1 block tofu cubed
  • 2 cups mixed veggies bell peppers, broccoli, carrots
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 clove garlic minced
  • 1 teaspoon ginger minced
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions 

  1. Heat oil in a pan over medium heat.
  2. Add tofu and cook until golden brown. Remove and set aside.
  3. In the same pan, add garlic and ginger. Sauté for a minute.
  4. Add mixed veggies and cook until tender.
  5. In a bowl, mix peanut butter, soy sauce, maple syrup, and rice vinegar.
  6. Add tofu back to the pan, pour the sauce over, and mix well.
  7. Cook for another 5 minutes. Season with salt and pepper.
