Instructions
1. Heat oil in a pan over medium heat.
2. Add tofu and fry until golden brown. Remove and set aside.
3. In the same pan, add green curry paste and fry for a minute.
4. Add coconut milk and bring to a simmer.
5. Add vegetables and cook until tender.
6. Stir in soy sauce and sugar.
7. Add tofu back to the pan and mix well.
8. Serve hot with rice.
