Instructions
1. In a pot, bring the vegetable broth to a boil.
2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add mushrooms, tomatoes, soy sauce, lime juice, and chili paste. Cook for another 10 minutes.
4. Stir in coconut milk and cook for 5 more minutes.
5. Remove from heat and garnish with chopped cilantro before serving.
