Ingredients 

Main Ingredients

  • 4 cups Vegetable broth
  • 1 cup Mushrooms, sliced
  • 1 cup Cherry tomatoes, halved
  • 2 stalks Lemongrass, chopped
  • 3 slices Galangal
  • 3 leaves Kaffir lime leaves
  • 2 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Chili paste
  • 1 cup Coconut milk
  • 1 handful Cilantro, chopped

Instructions 

  1. 1. In a pot, bring the vegetable broth to a boil.
  2. 2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. 3. Add mushrooms, tomatoes, soy sauce, lime juice, and chili paste. Cook for another 10 minutes.
  4. 4. Stir in coconut milk and cook for 5 more minutes.
  5. 5. Remove from heat and garnish with chopped cilantro before serving.
