Ingredients 

Soup Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans diced tomatoes (14.5 oz each)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 package vegan tortellini
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in vegetable broth and diced tomatoes. Stir in dried basil and oregano.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add vegan tortellini and cook according to package instructions, usually about 7-10 minutes.
  7. Season with salt and pepper to taste. Serve hot.
