Tomato Tortellini Soup

Soup Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans diced tomatoes (14.5 oz each)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 package vegan tortellini
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in vegetable broth and diced tomatoes. Stir in dried basil and oregano.
Bring to a boil, then reduce heat and simmer for 10 minutes.
Add vegan tortellini and cook according to package instructions, usually about 7-10 minutes.
Season with salt and pepper to taste. Serve hot.
