Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Carrots, chopped
  • 2 cups Celery, chopped
  • 4 cups Vegetable Broth
  • 2 cans Diced Tomatoes (14.5 oz each)
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 2 cups Fresh Spinach

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add diced onion and minced garlic. Sauté until onion is translucent.
  3. 3. Add chopped carrots and celery. Cook for about 5 minutes.
  4. 4. Pour in vegetable broth and diced tomatoes. Stir in dried basil, dried oregano, salt, and black pepper.
  5. 5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. 6. Add fresh spinach and cook until wilted, about 2 minutes.
  7. 7. Serve hot and enjoy!
