Ingredients 

Main Ingredients

  • 4 pieces bolillo rolls or other crusty rolls
  • 1 can refried beans
  • 1 piece avocado, sliced
  • 1 piece tomato, sliced
  • 1 piece small red onion, thinly sliced
  • 1 cup shredded lettuce
  • 0.5 cup pickled jalapeños
  • 0.25 cup vegan mayonnaise
  • to taste Salt and pepper

Instructions 

  1. Slice the rolls in half and toast them lightly.
  2. Spread a layer of refried beans on the bottom half of each roll.
  3. Layer avocado, tomato, red onion, lettuce, and pickled jalapeños on top of the beans.
  4. Spread vegan mayonnaise on the top half of each roll.
  5. Season with salt and pepper.
  6. Close the sandwiches and serve immediately.
