Ingredients 

Main Ingredients

  • 4 pieces Small tortillas
  • 1 cup Black beans cooked
  • 1 cup Corn kernels cooked
  • 1 cup Diced tomatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • to taste Salt
  • to taste Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Lightly brush both sides of the tortillas with olive oil.
  3. Press each tortilla into the cups of a muffin tin to form a bowl shape.
  4. Bake for 10 minutes or until the edges are golden and crispy.
  5. In a bowl, mix black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  6. Fill each tortilla cup with the bean mixture.
  7. Serve immediately.
