  • 1 cup Black Beans cooked
  • 1 cup Corn Kernels cooked
  • 1 cup Diced Tomatoes
  • 1 cup Diced Avocado
  • 1 cup Chopped Cilantro
  • 1 tablespoon Olive Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add black beans, corn kernels, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  3. 3. Warm tortillas in a separate skillet or microwave.
  4. 4. Assemble tacos by placing the bean and corn mixture on each tortilla. Top with diced tomatoes, avocado, and chopped cilantro.
  5. 5. Serve immediately and enjoy!
