Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and mashed
  • ¼ cup Vegan Mayo
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Nutritional Yeast
  • ¼ cup Red Onion finely chopped
  • 1 tablespoon Capers chopped
  • 1 teaspoon Lemon Juice freshly squeezed
  • to taste Salt
  • to taste Black Pepper
  • 4 slices Whole Grain Bread toasted
  • 1 cup Lettuce shredded
  • 1 medium Tomato sliced

Instructions 

  1. In a bowl, mash the chickpeas with a fork.
  2. Add vegan mayo, Dijon mustard, nutritional yeast, red onion, capers, lemon juice, salt, and pepper. Mix well.
  3. Spread the mixture on two slices of toasted bread.
  4. Top with lettuce and tomato slices. Cover with the remaining slices of bread.
  5. Cut sandwiches in half and serve.
