Instructions
In a bowl, mash the chickpeas with a fork.
Add vegan mayo, Dijon mustard, nutritional yeast, red onion, capers, lemon juice, salt, and pepper. Mix well.
Spread the mixture on two slices of toasted bread.
Top with lettuce and tomato slices. Cover with the remaining slices of bread.
Cut sandwiches in half and serve.
