Tunisian Vegetable Couscous Recipe

Main Ingredients
- 1 cup couscous
- 1 large onion, chopped
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth
- 2 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until soft.
Add carrots, zucchini, and red bell pepper. Cook for 5 minutes.
Stir in cumin, coriander, and paprika. Cook for another minute.
Add vegetable broth and bring to a boil.
Stir in couscous and chickpeas. Cover and remove from heat. Let sit for 10 minutes.
Fluff couscous with a fork and season with salt and pepper to taste.
