Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Add carrots, zucchini, and red bell pepper. Cook for 5 minutes.
  4. Stir in cumin, coriander, and paprika. Cook for another minute.
  5. Add vegetable broth and bring to a boil.
  6. Stir in couscous and chickpeas. Cover and remove from heat. Let sit for 10 minutes.
  7. Fluff couscous with a fork and season with salt and pepper to taste.
