Ingredients 

Main Ingredients

  • 2 large turnips peeled and thinly sliced
  • 2 large potatoes peeled and thinly sliced
  • 1 cup coconut milk
  • 1 cup vegetable broth
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ cup nutritional yeast
  • 1 tablespoon fresh thyme chopped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine coconut milk, vegetable broth, garlic, olive oil, salt, and pepper.
  3. Layer turnip and potato slices in a baking dish.
  4. Pour the coconut milk mixture over the layers.
  5. Sprinkle nutritional yeast and thyme on top.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and bake for another 10 minutes or until golden brown.
