Ingredients 

Main Ingredients

  • 1 medium beet peeled and shredded
  • 2 large carrots peeled and shredded
  • 3 medium potatoes peeled and cubed
  • 1 medium onion chopped
  • ½ medium head cabbage shredded
  • 1 can diced tomatoes 15 oz
  • 4 cups vegetable broth
  • 3 cloves garlic minced
  • 2 tablespoon olive oil
  • 2 tablespoon tomato paste
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add beets and carrots, cook for 5 minutes.
  3. Stir in tomato paste and cook for another 2 minutes.
  4. Add potatoes, cabbage, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes.
  6. Stir in sugar, vinegar, salt, and pepper. Cook for another 5 minutes.
  7. Serve hot, garnished with fresh dill.
