Vegan African Peanut Stew Recipe

- 1 tablespoon Olive oil
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 Red bell pepper, chopped
- 1 Sweet potato, peeled and cubed
- 1 can Diced tomatoes (14.5 oz)
- 4 cups Vegetable broth
- ½ cup Peanut butter
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- ¼ teaspoon Cayenne pepper
- 1 cup Kale, chopped
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute.
Stir in the chopped red bell pepper and sweet potato. Cook for 5 minutes, stirring occasionally.
Add the diced tomatoes (with their juice), vegetable broth, peanut butter, ground cumin, ground coriander, and cayenne pepper. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
Stir in the chopped kale and cook for another 5 minutes, until the kale is wilted.
Season with salt and pepper to taste. Serve hot.
