Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Red bell pepper, chopped
  • 1 Sweet potato, peeled and cubed
  • 1 can Diced tomatoes (14.5 oz)
  • 4 cups Vegetable broth
  • ½ cup Peanut butter
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • ¼ teaspoon Cayenne pepper
  • 1 cup Kale, chopped
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Stir in the chopped red bell pepper and sweet potato. Cook for 5 minutes, stirring occasionally.
  4. Add the diced tomatoes (with their juice), vegetable broth, peanut butter, ground cumin, ground coriander, and cayenne pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
  6. Stir in the chopped kale and cook for another 5 minutes, until the kale is wilted.
  7. Season with salt and pepper to taste. Serve hot.
