Vegan Air Fryer Potato Skins Recipe

- 4 medium Russet potatoes
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- to taste Salt and pepper
- ½ cup Vegan cheese shredded
- ¼ cup Green onions chopped
1. Preheat your air fryer to 400°F (200°C).
2. Scrub the potatoes clean and poke a few holes in them with a fork.
3. Air fry the potatoes for 20 minutes, or until they are tender when pierced with a fork.
4. Let the potatoes cool slightly, then cut them in half lengthwise and scoop out most of the flesh, leaving a thin layer.
5. In a mixing bowl, combine the olive oil, garlic powder, onion powder, salt, and pepper. Brush this mixture onto the potato skins.
6. Place the potato skins back in the air fryer, skin side down, and cook for another 5-7 minutes until crispy.
7. Remove the potato skins from the air fryer and sprinkle with vegan cheese. Return to the air fryer for 2-3 minutes, or until the cheese is melted.
8. Garnish with chopped green onions and serve immediately.
