Ingredients 

Main Ingredients

  • 1 cup raw cashews
  • 1 cup water
  • 2 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cups broccoli florets
  • 12 oz fettuccine pasta

Instructions 

  1. Soak cashews in hot water for 10 minutes.
  2. Drain cashews and blend with water, nutritional yeast, lemon juice, garlic, salt, and pepper until smooth.
  3. Cook pasta according to package instructions.
  4. In a large pan, heat olive oil over medium heat. Add onion and cook until translucent.
  5. Add broccoli and cook until tender.
  6. Pour cashew sauce into the pan and stir to combine.
  7. Add cooked pasta and toss to coat.
