- 2 cups gluten-free flour
- 1 cup orange juice
- ½ cup coconut sugar
- ¼ cup coconut oil, melted
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix the flour, coconut sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the orange juice, melted coconut oil, orange zest, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
