Ingredients 

Main Ingredients

  • 2 cups All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • ½ cup Coconut oil, solid
  • 1 cup Apple, peeled and diced
  • ½ cup Almond milk
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. Cut in the solid coconut oil until the mixture resembles coarse crumbs.
  4. Stir in the diced apple.
  5. In a separate bowl, mix the almond milk and vanilla extract. Pour into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and shape into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 20 minutes or until golden brown. Let cool slightly before serving.
