Vegan Apple Cinnamon Scones

Main Ingredients
- 2 cups All-purpose flour
- ¼ cup Sugar
- 1 tablespoon Baking powder
- ½ teaspoon Salt
- 1 teaspoon Ground cinnamon
- ½ cup Coconut oil, solid
- 1 cup Apple, peeled and diced
- ½ cup Almond milk
- 1 teaspoon Vanilla extract
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
Cut in the solid coconut oil until the mixture resembles coarse crumbs.
Stir in the diced apple.
In a separate bowl, mix the almond milk and vanilla extract. Pour into the dry ingredients and stir until just combined.
Turn the dough out onto a floured surface and shape into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
Bake for 20 minutes or until golden brown. Let cool slightly before serving.
