  • 0.5 cup aquafaba liquid from a can of chickpeas
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 1 cup neutral oil like sunflower or canola

Instructions 

  1. In a tall container, combine aquafaba, vinegar, mustard, and salt.
  2. Using an immersion blender, blend until frothy.
  3. Slowly drizzle in the oil while blending until thick and creamy.
  4. Adjust seasoning if needed.
