Ingredients 

Main Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 teaspoon salt
  • 2 tablespoon olive oil
  • 1 head radicchio chopped
  • 1 clove garlic minced
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Bring water to a boil in a pot. Add salt and polenta, stirring constantly.
  3. Reduce heat and simmer until thickened, about 15 minutes.
  4. Pour polenta into a greased baking dish and let cool.
  5. In a pan, heat olive oil over medium heat. Add garlic and cook until fragrant.
  6. Add radicchio and cook until wilted, about 5 minutes.
  7. Stir in balsamic vinegar, salt, and pepper.
  8. Spread radicchio mixture over the polenta.
  9. Bake for 15 minutes or until heated through.
