Vegan Baked Polenta with Radicchio
A delicious and easy vegan dish featuring baked polenta topped with sautéed radicchio.

Main Ingredients
- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 2 tablespoon olive oil
- 1 head radicchio chopped
- 1 clove garlic minced
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Bring water to a boil in a pot. Add salt and polenta, stirring constantly.
Reduce heat and simmer until thickened, about 15 minutes.
Pour polenta into a greased baking dish and let cool.
In a pan, heat olive oil over medium heat. Add garlic and cook until fragrant.
Add radicchio and cook until wilted, about 5 minutes.
Stir in balsamic vinegar, salt, and pepper.
Spread radicchio mixture over the polenta.
Bake for 15 minutes or until heated through.
