- 4 sweet potatoes medium-sized
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes thoroughly.
Pat them dry and pierce each sweet potato a few times with a fork.
Rub each sweet potato with a bit of olive oil and sprinkle with salt and pepper.
Place the sweet potatoes on a baking sheet lined with parchment paper.
Bake for about 45 minutes, or until tender when pierced with a fork.
Remove from the oven and let cool slightly before serving.
