Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • Salt and pepper to taste
  • 0.25 cup water

Instructions 

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and cook until translucent.
  3. Add minced garlic and diced bell pepper, cook for another 3-4 minutes.
  4. Stir in black beans, kidney beans, and corn.
  5. Add chili powder, cumin, paprika, salt, and pepper.
  6. Pour in water and mix well.
  7. Cook for another 5-7 minutes, stirring occasionally.
  8. Serve warm in taco shells or tortillas.
