Vegan Beef Stew
A hearty and delicious vegan stew that mimics the flavors of traditional beef stew.

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, sliced
- 1 cup frozen peas
- 4 cups vegetable broth
- 2 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
Heat olive oil in a large pot over medium heat.
Add the diced onion and cook until translucent.
Stir in the minced garlic and cook for another minute.
Add the carrots, potatoes, and celery. Cook for about 5 minutes.
Pour in the vegetable broth and add the tomato paste, thyme, and rosemary. Stir well.
Bring to a boil, then reduce heat and let it simmer for 25-30 minutes, or until vegetables are tender.
Add the frozen peas and cook for another 5 minutes.
Season with salt and black pepper to taste.
Serve hot and enjoy!
