Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 stalks celery, sliced
  • 2 potatoes, diced
  • 1 cup mushrooms, sliced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes 15 oz
  • 4 cups vegetable broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add carrots, celery, and potatoes. Cook for about 5 minutes.
  3. Stir in mushrooms and green beans. Cook for another 5 minutes.
  4. Add diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in frozen peas, thyme, and rosemary. Season with salt and pepper. Cook for another 5 minutes.
