Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can black beans, drained and rinsed (15 oz)
  • 1 can white beans, drained and rinsed (15 oz)
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 bay leaf

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  3. Add black beans, white beans, vegetable broth, ground cumin, smoked paprika, salt, pepper, and bay leaf. Stir well.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Remove bay leaf before serving. Enjoy!
