Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 red bell pepper, chopped
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can diced tomatoes 15 oz
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped optional

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add carrot, celery, and red bell pepper. Cook for 5-7 minutes.
  4. Stir in black beans, diced tomatoes, and vegetable broth.
  5. Add ground cumin and smoked paprika. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Garnish with fresh cilantro before serving, if desired.
