Instructions
Heat olive oil in a large pot over medium heat.
Add onion and garlic, cook until softened.
Add carrot, celery, and red bell pepper. Cook for 5-7 minutes.
Stir in black beans, diced tomatoes, and vegetable broth.
Add ground cumin and smoked paprika. Season with salt and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Garnish with fresh cilantro before serving, if desired.
