Vegan Black Bean Quesadillas Recipe

Main Ingredients
- 1 can black beans drained and rinsed
- 1 cup corn kernels fresh or frozen
- 1 cup bell pepper diced
- 1 cup onion diced
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup vegan cheese shredded
- 4 large tortillas
- 2 tablespoon olive oil
1. In a mixing bowl, combine black beans, corn, bell pepper, onion, garlic, chili powder, and cumin.
2. Heat a skillet over medium heat and add a bit of olive oil.
3. Place a tortilla in the skillet and sprinkle half with vegan cheese. Add a portion of the black bean mixture on top of the cheese.
4. Fold the tortilla in half and cook until golden brown, about 2-3 minutes per side.
5. Repeat with remaining tortillas and filling.
6. Serve hot with your favorite salsa or guacamole.
