Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 cans Black Beans, drained and rinsed
  • 4 cups Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Lime Juice
  • 0.25 cup Fresh Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add black beans, vegetable broth, ground cumin, chili powder, salt, and black pepper. Stir to combine.
  5. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Use a blender to puree the soup until smooth, or leave it chunky if you prefer.
  7. Stir in lime juice and chopped cilantro before serving.
