Vegan Black Bean Soup with Pumpkin

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 0.5 teaspoon chili powder
- 4 cups vegetable broth
- 2 cans black beans, drained and rinsed
- 1 can pumpkin puree
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, lime wedges
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Stir in cumin, smoked paprika, and chili powder. Cook for another minute.
Add vegetable broth, black beans, and pumpkin puree. Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper. Use an immersion blender to blend the soup to desired consistency.
Serve hot with optional toppings.
